Need no occasion to prepare everyone’s favourite dish Chicken Dum Biryani. There is lot of energy with the thought of smiles on faces who eat biryani. More than heart felt, its tummy felt happiness. Here, is my secret recipe for Chicken Dum biryani. Hope you will give it a try and let me know how it turns out.

Preparation Time: 30 mins

Cooking Time: 1:30 mins

Marination Time: 2 hours or Overnight


  1. Basmati Rice – 1Kg
  2. Chicken – 1.5Kg Boneless
  3. Oil – 3 or 4 cups
  4. Onions – 4 Large Size (thinly sliced)
  5. Ginger Garlic paste – 4tbsp
  6. Mint Leave – ½ cup
  7. Dhaniya powder – 2 tbsp
  8. Biryani Masala – 4 tbsp
  9. Chilli powder – 2 tbsp
  10. King Garam Masala – 2 tbsp
  11. Yogurt – 1.5 cups (think)
  12. Milk – ½ cup (warm milk)
  13. Saffron – few strands
  14. Salt to taste

For Marination

Start by marinating chicken, take a bowl add chicken pieces and add the items mentioned in ingredients (from 5 to 11),add salt to taste. Let it marinate for 2 hours but overnight will be great.

Before you start cooking, soak basmati rice for an hour.

Soak Saffron in warm milk.

Next, heat oil in a big pot in which you will make biryani. Add onions, little salt and sugar, allow it to cook for some time till onions turn golden brown.

Alongside, boil a bowl of water, in which the rice will be cooked. Add salt and oil to boiling water, add in the drained rice and allow it to cook for 10 mins or till it is 90% cooked. Drain the excess water and set aside the rice.

Once the onions are golden brown, Take out onions from oil and set aside.

In the same oil add in the chicken and mix well for 5 minutes.

After mixing well, start layering process, first put a layer of rice and top it with fried onions and saffron milk repeat the layering process again. Cover the entire pot with silver foil and cover with a plate or the other process is to seal (seal the edges) the pot the lid with all-purpose flour dove. Place some weight on the plate or lid and allow it to cook for 40 minutes on very low flame. This process is crucial for chicken dum biryani.

Now remove the weight and fluff the rice carefully. Serve and enjoy the Chicken Dum Biryani. The taste will linger in your mouth and smell in your home for a while.

Important Notes:

  1. Marinating chicken and soaking rice is important so do not forget this step.
  2. Good quality basmati rice is vital for this recipe; make sure that the rice does not break.
  3. Cook time for rice is very important as over cooked rice can spoil your dish and it becomes mushy. Check rice frequently and drain off complete water from rice.
